Each histogram element represents a relative percentage of email for any given day that falls into one of the Email processing categories (visually portrayed via distinct color coding) as follows:

Bounce
A Message could not be delivered to it's intended destination, usually as a result of an improperly defined destination or the destination is not willing to accept the Message (thus, an "Undelivereable Message". After a suitable period, if the Message cannot be delivered, an attempt is made to return it to the Sender with a Message Delivery Notification.
Defer
A Message could not be delivered for what is usually a transient condition (a "soft-fail"). It could be as simple as an invalid recipient address, might be a Spam related GreyListing problems, or a condition related to the receiving Mail Server that may be resolved in the future. Normally, the Mail Server will retry to send it at a later time, but if a Message stays in the Deferred queue too long, it will be returned to the sender (if possible).
Deliver
Represents Messages that have actually been delivered to the intended Recipient(s)
Discard
A Message is being removed (Discarded) from the Mail Server's queues.
Forward
Messages that are intended to be sent elsewhere for final dispensation (Delivery)
Held
A Message has been diverted from normal processing and has been placed into an indefinite Hold that will require an Administrator to intervene
Receive
Identifies Messages that have been accepted by the Mail Server for delivery to one or more Recipients.
Reject
A Message was Rejected by the Mail Server for processing. This can be for Message Content (SpamAssassin), Message source reputation problems (RBL), or originating Mail Server configuration issues (no Reverse PTR, SPF Violation, etc.).
